  • a pinch soy sauce
  • 4 oz dashi
  • 1/4 cup mirin
  • 2 tbsp scallions
  • 1 cup toasted sesame seeds
  • 3 cloves fresh ginger
  • to taste flaky salt
Method

Step by step

  1. Toast the spices in a little oil until fragrant, watching so they do not scorch.
  2. Cook the onion, garlic and ginger low and slow until soft and sweet.
  3. Add the japanese curry, then the liquid, and let it barely simmer to build depth.
  4. Round it out with a swirl of cream or a handful of cilantro before serving.
