Ingredients

What you'll need

  • 1 lb t-bone
  • 1/4 cup unsalted butter
  • 2 tbsp garlic
  • 1 cup fresh thyme
  • 3 cloves kosher salt
  • 1 tsp coarse black pepper
  • 1/2 cup olive oil
  • to taste good finishing oil
Method

Step by step

  1. Pat the t-bone dry and season it well so it browns instead of steaming.
  2. Get your pan hot and render the aromatics until they smell sweet and toasty.
  3. Return the t-bone, add just enough liquid, and simmer until everything is tender.
  4. Taste, brighten with a squeeze of citrus, and plate while it is still hot.
