  • 1 lb hot links
  • 1/4 cup barbecue rub
  • 2 tbsp brown sugar
  • 1 cup smoked paprika
  • 3 cloves yellow onion
  • 1 tsp kosher salt
  • 1/2 cup cracked black pepper
  • to taste good finishing oil
Method

Step by step

  1. Pat the hot links dry and season it well so it browns instead of steaming.
  2. Get your pan hot and render the aromatics until they smell sweet and toasty.
  3. Return the hot links, add just enough liquid, and simmer until everything is tender.
  4. Taste, brighten with a squeeze of citrus, and plate while it is still hot.
