Ingredients

What you'll need

  • 1 lb egg rolls
  • 1 medium soy sauce
  • 1 lb garlic
  • a pinch fresh ginger
  • 4 oz scallions
  • 1/4 cup toasted sesame oil
  • 2 tbsp Shaoxing wine
  • to taste good finishing oil
Method

Step by step

  1. Get everything measured and within reach -- breakfast moves quickly.
  2. Warm the pan properly before anything goes in so nothing sticks.
  3. Cook low and slow for tender results, or hot and fast for crisp edges.
  4. Serve the moment it is ready, while it is at its very best.
